In 2025 Riggins sold the Gillham Road assets and lease and moved the Brewer’s Kitchen brand and menu into 3 Trails Brewing on Independence Square, which he purchased — so the storefront is closed while the concept continues under the same owner.
Description
Brewer’s Kitchen was a Midtown Kansas City scratch kitchen built around local craft beer, opening in 2019 in the former KimChee space near 31st and Gillham. 1 Owner Chris Riggins used beer as an ingredient across the menu: burgers were ground fresh by hand each day and marinated in local craft beer for about 24 hours (the restaurant’s #cookedinbeer hook), and condiments such as a blueberry-stout jam, raspberry-beer jam, chipotle-beer barbecue sauce, “drunken” ketchup and mustard, and a Monk & Honey mustard were made in house. 2 The eight signature burgers were joined by a build-your-own option in roughly the $12-$15 range with a choice of side. 2 In late 2023 Riggins opened Brewer’s Corner in the space next door (3105 Gillham) as a beer hall with a full bar, one of the larger local-brewery tap lists in the area, and games such as darts and board games. 13
Ownership and history
Brewer’s Kitchen was founded and operated by Chris Riggins, a career Kansas City hospitality operator. Per Kansas City Magazine, Riggins started in restaurants at age 16 at Outback Steakhouse, became a managing partner in Iowa City, and spent five years as a regional training manager before opening his own concept. 1 He opened Brewer’s Kitchen at 3107 Gillham Road in 2019 and added the adjacent Brewer’s Corner beer hall in late 2023. 13
In 2024, ahead of any sale, Riggins extended his brand into Independence by running the food program at 3 Trails Brewing on the Square — a walk-up window branded Brewer’s Wrap House serving wraps, sandwiches, and “Brew-Ritos” — an arrangement that let the brewery focus on beer while Riggins ran the kitchen. 1
In a May 2025 Kansas City Star report, Riggins said he was selling the Brewer’s Kitchen assets and the remainder of his 10-year lease at 3107 Gillham Road to new operators, while relocating the Brewer’s Kitchen brand and menu into 3 Trails Brewing at 111 N.
