KCUR’s 2023 survey of KC butcher shops singles out the Akaushi beef, house-made sausage, responsibly harvested seafood and pasture-raised chicken, and — relevant to why this page sits in the cheese-and-charcuterie cluster — a case built for board-building: prosciutto, mortadella, house-smoked bologna, cheddar smoked on the premises, and a Honey Bee Goat Gouda. The only sourced ownership detail this pass is historical: a Lawrence Journal-World feature dated June 1, 2014 reports that Stuart Aldridge, formerly a sous-chef at the Rieger Hotel, took over running the shop in November 2013, and describes the sandwich counter he added.4 Twelve years is a long time for a 2014 datapoint to stand in for the present, and no current, resolvable source naming the shop’s owner as of 2026 was found.
