Pasture-raised Black Angus and pasture-raised pork, free-range poultry and farm eggs, and seasonal duck and rabbit all come from Barham Family Farm in Kearney, MO; Wagyu from Maries River Wagyu, Westphalia, MO; 100% grass-fed bison from KC Buffalo Co., Belton, MO; free-range lamb from Green Dirt Farms, Weston, MO — the same producer behind green-dirt-on-oak. Seafood is sustainably harvested and seasonal, with Missouri caviar. Several categories carry a standing “please call in advance to reserve specific cuts.”2

Surnames come from The Pitch (Aug 6, 2024, by Jordan Baranowski), which identifies the pair as “the husband-and-wife team of Louis Guerrieri and Sarah Nelson” and places Carne Diem “just a few doors down from their restaurant, Ombra,” in Briarcliff. Nelson is quoted on growing up in Kearney, Missouri — “We were surrounded by farms” — and now sources from a farmer she grew up across the street from.3 Because Carne Diem and Ombra share owners, the pair is a small local two-concept operation; that does not displace Tier 1, which turns on owner-operation and KC locus, not on concept count.
