Disco Burger began in 2024 as a smash-burger cart stationed outside Varsity Club at 319 Delaware St in the River Market — itself a merger of two separate pop-ups that Matt Chapman and Darren Carter had each run previously. In July 2026 the pair opened Disco Burger’s first standalone restaurant at 600 E. 63rd St in Brookside, in stages: as of July 24, 2026 the walk-up window is serving a limited menu (burgers and fries) Thursday through Sunday, 4-9pm, orders placed online, to-go only while interior and patio construction finishes — “You’ll have to excuse our mess, some projects are still being completed.” The completed restaurant will add indoor and outdoor dining, soft serve ice cream, shared appetizers, steak frites, salads, seasonal vegetables, rotating specials and a small bar. The original River Market cart at Varsity Club remains operational.132

Matt Chapman and Darren Carter merged their two separate pop-up concepts into Disco Burger in 2024, operating from the kiosk/cart outside Varsity Club (the Roye brothers’ River Market cocktail bar) — see varsity-club for that partnership.
