The first eggtc. opened in 2006 at 5107 Main Street and was founded by Minsky’s, the locally founded Kansas City pizza company.²⁵ The name is styled as a lowercase wordmark — “eggtc.” — playing on “egg” plus “etc.”² Minsky’s expanded the concept in 2009 with a second location at 7182 Renner Road in Shawnee, Kansas, in the former Arizona’s Neighborhood Bar and Grille space.⁵

In 2024, Minsky’s sold the Shawnee restaurant; new owners Matt and Heather McQueeny rebranded that location as Rize N Shine, keeping roughly 80% of the menu and staff.⁵ The original Main Street / South Plaza location covered by this page remains under Minsky’s ownership and continues operating as eggtc.⁵ The company website lists the South Plaza store as the active eggtc. location.¹
