Luca Bagel is Luke Salvatore’s Jersey-style hand-rolled bagel shop at 633 E 63rd St in Brookside, in the space formerly occupied by Mattie’s Vegan. Salvatore — who co-owns providence-pizza — started Luca Bagel as a farmers market pop-up at the Overland Park Farmers Market, where it drew long lines before he opened the permanent Brookside location in summer 2025. The operation reportedly bakes around 4,000 bagels per weekend.
