Nunez Foods is a Kansas City, Kansas birria kitchen that Brenda Nunez started in 2020 from home recipes, then a takeout counter at 2110 N. 18th St., then food trucks, then a sit-down Nunez Foods Eatery at 1623 Genessee St. in the West Bottoms — opened late June 2026 in the former Fortunati Pizza space. Description
Nunez’s kitchen is built around one pot of birria. She told The Star in July 2026 it is “our most sellable food,” cooked slowly, a pot a day, always rotating.1 The West Bottoms menu keeps the viral formats — birria ramen, birria “pizza” (quesadillas formed like a pizza, crisped so they do not fall apart), egg rolls, Flamin’ Hot Cheetos-dusted fried balls — and adds sit-down plates: fajitas, camarones a la diabla, brunch chorizo and eggs.1 She goes through 400 packs of ramen a week.1

The West Bottoms room is about 50 seats, pink and black, with a pink neon “Dial for tacos” sign and a mounted rotary phone. Nunez told The Star pink is not her favorite color — black is — but the flamingo palette is a private metaphor from a book on flamingos losing their color as new mothers, which she connected to starting the business as a single mother.1 The business is family-run: The Star saw her youngest in the room and her oldest daughter serving.1
Ownership and history
Brenda Nunez is the owner on both Star pieces. Origin story, consistent across April and July 2026: a California trip where she ate birria ramen; she could not find it in Kansas City; she cooked it at home; friends asked her to sell it; the KCK takeout counter opened in 2020; two food trucks followed; the West Bottoms dining room is the first full sit-down.12 April 2026: she had been at 2110 N. 18th St. “six years” and was parking a truck outside 1623 Genesee during renovation, aiming to open in about three weeks — a timetable that slipped from May into late June.2
KCK takeout remains open per the April piece; nothing this pass says it closed.2
