The Parker Hollow is a seafood-forward French bistro and raw bar located in a restored 150-year-old building at 100 Main Street in downtown Parkville, opened by chef Jonathan Justus and his partner Camille Eklof in October 2025.12 The concept centers on sustainably sourced coastal seafood — an oyster program, raw bar, and French bistro plates — a departure in cuisine but a continuation of the Justus/Eklof commitment to ingredient-driven cooking that made their earlier restaurant, Justus Drugstore in Smithville, a landmark of Kansas City-area dining for more than a decade.2
