Description

Snead’s Bar-B-Q opened November 1, 1956, when Bill Snead built the restaurant — including its brick barbecue pit — on the northwest corner of his family farm west of Belton, Missouri, south of Kansas City.12 Snead personally designed and constructed the building and the pit, and the barbecue-sauce recipe still in use dates to that 1956 opening.13

The restaurant is best known for its burnt ends, which Snead’s calls “brownies” — caramelized, crusty end-pieces served in beef, ham, and sausage varieties. Food writer Calvin Trillin documented Snead’s “brownies” alongside the Arthur Bryant’s burnt-end tradition, placing Snead’s among the early practitioners of the burnt-end style that became a hallmark of Kansas City barbecue.2 The pit runs on hickory only; sauce and beans are cooked in kettles inside the brick pit for smoke flavor.24

Founder — contradiction resolved

The KS.City henry-perry-kc-barbecue-lineage page previously attributed Snead’s 1956 founding to both “Pat Daley” and “Leeward Snead.” Neither name is supported by any published source located in research; every authoritative account (Visit KC’s BBQ Trail, Joe’s Barbecue Quest, FoodGPS, and Snead’s own website) credits Bill Snead as the sole founder.123 The lineage page has been corrected to match (see Session-Log-Compiler 2026-06-28).
