T.C.’s Fully Loaded is Thomas “TC” Clark’s loaded baked potato shop in KCK — a walk-up curbside operation at 1407 Southwest Blvd, open Thursday through Saturday. Clark is an Alabama native who grew up watching KC barbecue culture wash over his Prattville roots and spent three formative years in Japan as the child of a career soldier, where he noticed the Japanese creativity applied to ingredients as familiar as McDonald’s shrimp burgers. He moved to Kansas City in 2019 for an IT consulting role at Cerner, left after 18 months, and during the COVID pandemic started making loaded baked potatoes in his apartment at 27th and Troost — meeting customers at the corner bus stop in what he called “potato drops.” The concept fuses Alabama’s BBQ potato tradition (loaded potatoes are staples at Alabama barbecue joints) with Kansas City’s sauce culture and Japanese-inflected flavor thinking. He launched a food truck around 2022, then opened the Southwest Blvd storefront in October 2024 at age 31. Clark also produces a retail potato chip and seasoning line under the “Potatoman” brand.
