The Hungry Hatch is a health-forward fast-casual restaurant, caterer and food truck at 23 E 3rd St in the City Market, in the River Market. It began in 2019 as a food truck started by a West Platte School District technology integration specialist who spent the summer of 2018 working weekends on a friend’s truck; the founder’s daughter Katie joined at launch. A brick-and-mortar at Parlor KC closed under COVID-era pressures, after which the City Market — already home to the truck’s commissary kitchen — offered the business a permanent spot. Build-your-own globally inspired bowls, wraps and salads across vegetarian, vegan, gluten-friendly, keto, paleo and Mediterranean diets.

Description

The Hungry Hatch is a health-forward fast-casual restaurant at 23 E 3rd Street inside Kansas City’s City Market, in the River Market. It also operates a catering arm and a mobile food truck that can be booked for offices, festivals, weddings, schools and private events.12

The business began as a food truck. Its founder — who writes about the business in the first person on its About page and is not named there — was working as a Technology Integration Specialist at the West Platte School District in 2018 and spent that summer’s weekends helping on a friend’s food truck. After a full season in the food truck scene, the founder bought a truck in autumn 2018 and built a menu around healthy eating and specific dietary needs, testing the concept on the teachers they had been supporting at work. The Hungry Hatch launched on the road in 2019 with the founder’s daughter Katie joining the venture, and worked 130 food truck events between 25 April and 5 November of that first season.2

Parlor KC subsequently approached the business to bring the concept into a downtown brick-and-mortar, where the expanded space allowed the addition of all-natural smoothie bowls and cold-pressed juices. The Parlor location closed under the combined pressure of opening a restaurant during COVID, staffing shortages, and running the truck simultaneously. Two weeks later the City Market offered the business a space of its own — a natural fit, because the truck’s commissary kitchen was already located at the market, putting both operations under one roof.2

The current menu is a build-your-own format: the guest picks a menu concept, then a base (salad, jasmine rice, quinoa or wrap), then a sauce. Signature bowls are organised by global reference points — Asian, Mediterranean, Thai, Mexican, Southwest, KC BBQ, Okie BBQ and Classic — with a separate plant-based line (The Cuban, The Harvest, The Korean) to which chicken, tofu or shrimp can be added. The venue listing records the restaurant as cashless, with online ordering for pickup and catering, and free two-hour parking nearby. The business states it was voted a KC Favorite in 2023 and 2025.12

Items below are transcribed from the restaurant’s own menu page. No prices were recoverable. The first-party menu page renders item names and descriptions in served HTML but carries no prices; the business’s first-party Toast storefront (order.toasttab.com/online/the-hungry-hatch) returned HTTP 403 to an automated fetch on 2026-08-13 — a status that is not itself evidence of anything about the storefront. No aggregator was consulted and no price is asserted here.
