Apogee Coffee & Draft is a single-location, dual-personality venue in Olathe that “blends the energy of a coffeehouse, the buzz of a bar, and the comfort of a pizza spot.”1 As the operator describes the daypart arc: “The day starts with craft coffee, pastries, and easy breakfast bites. As the hours roll on, laptops close, cappuccinos give way to drafts and cocktails, and pizzas hit the oven with a perfect char.”1 The menu spans craft coffee and espresso, draft beer and cocktails, charred pizzas, Italian sandwiches, wraps, salads, and bar snacks, with gluten-free options available.2

The space occupies a “modern, outdoor-inspired corner” inside the RoKC climbing, yoga, and fitness facility in Olathe — a venue that founder Cory Stipp spent roughly two years envisioning alongside RoKC partners.3

Ownership and history

Apogee is owned by Cory Stipp, a fixture of the Kansas City independent-coffee scene. Stipp founded Quay Coffee, the River Market coffee shop, and exited that business in 2019, reinvesting nearly all of the sale proceeds into Apogee.3 He built Apogee as a coffee-and-draft concept attached to the then-new RoKC climbing gym in Olathe.3

The venue was set to open in spring 2020, just as metro-wide COVID-19 Stay-at-Home orders took effect — a launch Stipp characterized as “closing before you even opened.”3 The business worked through that delayed, obstacle-laden start and established itself as an all-day neighborhood destination. Trade coverage ahead of opening described the concept as offering pizza, sandwiches, cocktails, beer, and cookies.4
