Booth Creek Wagyu is a Kansas-raised wagyu beef retail butcher/market founded by Dave Dreiling — rancher and entrepreneur who launched the Booth Creek Wagyu brand in summer 2020 from his ranch in Manhattan, KS. The Prairie Village location (Meadowbrook Shopping Center, near 95th & Nall) opened December 2024 — the second KC-metro retail storefront after an Overland Park location opened August 2023.

Description

Booth Creek Wagyu is Dave Dreiling’s retail wagyu beef brand, founded in summer 2020 from his ranch in Manhattan, KS. After building a direct-to-consumer following, Dreiling opened the first brick-and-mortar retail store in Overland Park in August 2023. A Prairie Village location in Meadowbrook Shopping Center (near 95th & Nall) opened in December 2024, the second KC-metro storefront.

The concept is retail-only — Kansas-raised wagyu steaks and snacks, no restaurant component. Booth Creek Wagyu qualifies for Registry coverage under the expanded scope admitting Tier 1 non-service local businesses (makers, retailers, craft producers). The craft-forward, independent, ranch-to-retail model fits the heirloom-grade end of the market.
