Casa Mexico

Casa Mexico is a Kansas City-metro group of authentic, full-service Mexican restaurants built by Guadalajara-born restaurateur Jose Gutierrez, who came to the United States in 1999 and worked his way up from a dishwashing job in Utah before opening his first Casa Mexico in Belton in 2007, followed by Independence (2015) and Blue Springs (2018).¹ Gutierrez later opened Mexico Lindo KC in south Kansas City as his fourth venture in 2024.¹ The Belton flagship now operates under the name “Bonito Casa Mexico”; the Blue Springs location remains fully active, while the Independence location appears to have closed.

Description

Casa Mexico is a locally owned Kansas City-metro group of authentic, sit-down Mexican restaurants serving Mexican and Tex-Mex fare with full liquor bars and margaritas.²¹ The menu spans warm tortilla chips with homemade salsa, seasoned rice, seafood chimichanga made with real shrimp and crabmeat, choripollo, carnitas, fajitas, soft tacos, enchiladas, quesadillas, and tamales, with an emphasis on fast, friendly service.¹²

The group has operated up to three KC-metro locations, all in the eastern and southern suburbs:

The Blue Springs restaurant is the clearest currently-operating flagship, with an active official ordering site and confirmed hours; it is used here as the primary map pin.² The original Belton location continues under the “Bonito Casa Mexico” name at the same 704 E North Ave address.³⁴ The Independence location at 19321 E US Highway 40 is listed as closed on aggregator directories and does not appear in a 2026 local-press Independence dining guide.⁵

Ownership and history

Casa Mexico was founded by Jose Gutierrez, who is originally from Guadalajara, Mexico. According to the Martin City Telegraph, Gutierrez came to the United States in 1999 and first worked as a dishwasher in Utah before relocating to the Kansas City area, where he opened his first restaurant — Casa Mexico in Belton — in 2007.¹ He followed it with a second Casa Mexico in Independence in 2015 and a third in Blue Springs in 2018.¹ In 2024, Gutierrez opened Mexico Lindo KC in south Kansas City’s Watts Mill area as his fourth and most upscale concept, telling the paper he sourced higher-quality ingredients there (for example, outsized skirt steak for the carne asada) while praising south Kansas City despite frustration with the permit process.¹

The restaurants are independently owned and operated by Gutierrez within the Kansas City metro. The Belton flagship now carries the name “Bonito Casa Mexico” at its original 704 E North Ave address (corner of North Avenue and Bradford Lane, near Price Chopper and Vintage Stock).³⁴
