Mexico Lindo KC

Mexico Lindo KC is a family-owned Mexican restaurant and bar at 1046 W 103rd St in the Watts Mill Plaza, south Kansas City, opened in March 2024 by restaurateur Jose Gutierrez in the former Cacao Restaurante space (an Applebee’s before that). It is the fourth restaurant from Gutierrez, who runs Casa Mexico locations in Belton, Independence, and Blue Springs, and it is pitched as an elevated, higher-ingredient-quality take on his sister restaurants’ menu, with a strong mariscos (seafood) lean.

Description

Mexico Lindo KC is a full-service Mexican restaurant and bar occupying the former Cacao Restaurante space (and an Applebee’s before that) at 1046 W 103rd St, on the north side of 103rd Street in the Watts Mill Plaza near 103rd and State Line Road.¹² The dining room is decorated with brightly painted orange and yellow walls, Mexican artwork and murals, some antique furniture and large televisions, with a bar fronted by colorfully designed talavera Mexican tiles.¹ The menu is broad — appetizers, soups and salads (menudo, sopa de mariscos), chicken (pollo asado, pollo fundido), burritos, chimichangas, quesadillas (including quesabirria), especialidades such as the molcajete, seafood plates, fajitas, mixed “Cielo, Mar y Tierra” grills, enchiladas, and a weekday lunch menu — with an evident seafood (mariscos) emphasis.³ The restaurant is positioned as a step above owner Jose Gutierrez’s other restaurants, using some higher-quality ingredients (for example, skirt steak in the carne asada).¹ It is family-owned and offers dine-in, takeout, and delivery.⁴

Ownership and history

Mexico Lindo KC is owned by Jose Gutierrez, who hails from Guadalajara, Mexico, immigrated to the United States in 1999, and began his career as a dishwasher in Utah.¹ After moving to the Kansas City area he opened his first restaurant, Casa Mexico, in Belton in 2007, followed by additional locations in Independence (2015) and Blue Springs (2018).¹ Mexico Lindo KC is his fourth restaurant venture and his first under the Mexico Lindo name — a fresh concept that shares much of the Casa Mexico menu but elevates it with higher-quality ingredients.¹ The restaurant took over the former Cacao Restaurante space in Watts Mill Plaza and planned to open around March 23, 2024, pending liquor-license approval.¹² (For the prior tenant of the space, see Cacao Restaurante.)
