Casita de lil Chingu is a Korean-Mexican mashup born from two culinary traditions meeting on Kansas City’s Southwest Boulevard. It is the newest chapter of the Kim Korean-food lineage documented at sura-eats (pop-up 2016 → Parlor stall → Chingu restaurant in Westport, closed May 2025). KeeYoung Kim, who ran Chingu Coffee in KC’s West Plaza until its May 2025 closure, pivoted to pop-up events — at Garden House Cafe, Sagebrush, and local gatherings — before teaming up with Gil Zavala and Jesus Zavala to establish a formal residency at 1639 SW Blvd in April 2026. The menu is a direct collision of Korean and Mexican cooking: carne asada tacos come loaded with kimchi-fied pico de gallo; al pastor is marinated in gochujang; Korean fried chicken shares a menu with tteokbokki (spicy rice cakes), galbi (short ribs), and bibimbap. Southwest Boulevard, historically one of KC’s most important Mexican-American corridors, is the fitting home for a kitchen that treats both traditions as equally foundational.
