Champion Burritos (North Kansas City) is the original location — founder Ernesto Aguirre launched the concept here in 2011, out of a North Kansas City gas station, and grew it into a five-location independent Mexican fast-casual group (North KC, Gladstone, Parkville, Olathe, Shawnee). The NKC restaurant at 2028 Swift Street is where the story starts: an early-morning burrito operation (doors open 6 a.m. most days) built on big specialty burritos, chilaquiles, and street tacos.

Description

Champion Burritos began here. In 2011, Ernesto Aguirre started selling burritos out of a North Kansas City gas station — the kind of origin story the Registry exists to record — and over the following decade built it into a five-location independent group spanning both sides of the state line. The Swift Street restaurant is the flagship in the truest sense: not the biggest or newest, but the original.

The operation runs on an early-morning clock — doors open at 6 a.m. most days, built around breakfast burritos and chilaquiles for the working crowd before rolling into the full menu of numbered specialty burritos, rapido burritos, street tacos, and platillos. The menu is brand-wide and identical across locations.
