eggtc. is a gourmet breakfast, brunch, and lunch restaurant at 5107 Main Street, a few blocks south of the Country Club Plaza in Kansas City, Missouri — the original and flagship of the eggtc. concept, often referred to as the “South Plaza” location.12 It sits near the UMKC campus and the Brookside and Plaza neighborhoods, and describes itself as “casual and eclectic,” with fine art and photography throughout the dining rooms.1

Ownership and history
The first eggtc. opened in 2006 at 5107 Main Street and was founded by Minsky’s, the locally founded Kansas City pizza company.25 The name is styled as a lowercase wordmark — “eggtc.” — playing on “egg” plus “etc.”2 Minsky’s expanded the concept in 2009 with a second location at 7182 Renner Road in Shawnee, Kansas, in the former Arizona’s Neighborhood Bar and Grille space.5
In 2024, Minsky’s sold the Shawnee restaurant; new owners Matt and Heather McQueeny rebranded that location as Rize N Shine, keeping roughly 80% of the menu and staff.5 The original Main Street / South Plaza location covered by this page remains under Minsky’s ownership and continues operating as eggtc.5 The company website lists the South Plaza store as the active eggtc. location.1
