Jinkies! Coffee and Hangout

Description

Jinkies! Coffee and Hangout is a retro, ‘70s-inspired coffeehouse built around a Saturday-morning-cartoon aesthetic.¹ Daughter and co-owner Madi Dombrowski named the shop after the catchphrase from Scooby-Doo, her favorite childhood show, and the interior leans into “trippy-dippy, groovy ’70s” styling — lava lamps, macramé plant holders, and retro memorabilia throughout.¹ The owners openly joke that every plant in the shop is artificial because they both have “black thumbs.”¹

The drink program centers on specialty espresso and signature sweet, seasonal coffee concoctions, with coffee served from Kansas City-area roaster Blip Coffee Roasters.³ The kitchen turns out made-from-scratch pastries daily and a “famous” sugar cookie, and the shop offers coffee flights so guests can sample several flavors in one visit.³ The “and Hangout” in the name reflects the owners’ framing of the space as a community gathering spot rather than a grab-and-go counter.

Jinkies! is owned and operated by Lisa Dombrowski and her daughter Madison (“Madi”) Dombrowski.¹² The business is consistently described in local press and tourism listings as a women-owned, mother-daughter, local coffee shop.²³ In a Pitch interview the pair described the venture as following their passions and building the business together from the ground up.¹²
