Jumpin’ Catfish was founded in 1986 in Olathe by David Hampton, who opened the restaurant because he felt there was a void in the area for good, home-cooked catfish.⁵ Hampton, a University of Arkansas graduate, remains listed as the owner of the Olathe location.⁵⁶ The business has operated as a locally owned, multi-decade independent and bills itself as serving the area “since 1986.”³

A second location opened in Lee’s Summit, Missouri.²³ The Lee’s Summit location’s founding year (reported elsewhere as 1997) and its current ownership were not confirmable to a primary/reliable source during this pass.
