Kculichi Sushi is a Sinaloan-style Mexican sushi restaurant on Southwest Boulevard in Kansas City, Kansas — billed as the metro’s first dedicated Mexican-sushi spot. Founded as a food truck in fall 2024 by three young Culiacán-connected owners, it opened a brick-and-mortar location in May 2026 and serves baked and fried rolls (no raw fish) until late on weekends.

Description

Kculichi Sushi (pronounced “koo-LEE-chee”) serves Sinaloan-style Mexican sushi — a regional style from Culiacán, Sinaloa, Mexico that combines the Japanese sushi roll format with Mexican meats, grilling, cheeses, and sauces.1 Unlike traditional Japanese sushi, nothing is served raw: the rolls are baked or fried, frequently topped with melted cheese and filled with beef, bacon, chicken, crab, or shrimp, and finished with chipotle sauce or serrano peppers.12

The name references “Culichi,” the demonym for people from Culiacán.1 The owners describe themselves as the first and only operation bringing Mexican-style sushi to the Midwest, noting that otherwise “you have to travel all the way to Houston.”1 Signature rolls include the Nini (beef, chicken, bacon), the Culichi (shrimp, cucumber), and the Sinaloense (crab, shrimp, creamy tampico topping).1

Ownership and history

Kculichi Sushi is owned by Jorge Sotelo Garcia, Noel Lugo, and Fidel Lugo — the latter two are brothers.13 The business launched as a mobile food truck in November 2024 and quickly built a following through viral videos posted by local food influencers, drawing busy weekend crowds at its Southwest Boulevard curbside location.13

After operating through the winter as a truck (“in the snowstorms, in the rain, in the cold”), the trio opened their first brick-and-mortar restaurant at 542 Southwest Blvd on Thursday, May 16, 2026.3 Sotelo Garcia (23) called the new space “a huge blessing to have a huge kitchen like we have now.”3
