Knub’s Pub was opened in 2015 by brothers Cory and Dave Knubley, who five years earlier had opened Pizza West in the same Shawnee shopping center. The brothers bring a combined 40-plus years of restaurant experience to the two ventures. Day-to-day, Cory Knubley runs Knub’s Pub while Dave Knubley concentrates on Pizza West.²³

The name carries family meaning: “Knub’s” derives from a nickname the Knubley family has used for generations. As Dave Knubley explained, “Everyone in the family, we’re all called Knubs” — a moniker reportedly handed down through five generations of the family.
