Local Pig is an artisan whole-animal butcher shop and charcuterie operation at the Historic City Market in Kansas City, Missouri, founded in February 2012.12 The shop was built around a straightforward belief: great food starts with responsible sourcing and skilled craftsmanship. All butchering is done in plain view of customers on a working block, and the shop sources its meat primarily from farms within 100 miles of Kansas City.34 In addition to fresh cuts, Local Pig produces an extensive house-made sausage and charcuterie program — including cured meats prepared using old-world techniques without refrigeration — and offers Sunday butchery and charcuterie classes for the public.14
The adjacent Pigwich counter, which opened a year after the butcher shop, built a loyal following serving hearty sandwiches built on the same whole-animal foundation.1 Both concepts relocated from the original East Bottoms industrial space to the Historic City Market in January 2019, where they now operate together at 20 E. 5th St.5 Local Pig was most recently voted Kansas City’s Best Butcher Shop and has been recognized nationally in the meat-trade press for its whole-animal model.36

Ownership and history
Local Pig was founded by Alex Pope, a classically trained chef from Eau Claire, Wisconsin (born in Peoria, Illinois), who relocated to Kansas City in 2005 so his wife could attend pharmacy school at UMKC.14 Pope had worked at the American Restaurant and R Bar in Kansas City before pivoting to butchery at age 29, partnering with Matt Kafka to open Local Pig in the East Bottoms in February 2012.21
The business grew steadily from a one-room butcher shop with interactive Sunday classes to a two-concept operation at City Market by 2019.5 Pope was named Kansas City’s Chef of the Year by Feast Magazine in 2015.6 Though not Kansas City-born, Pope arrived in 2005 and has spent his entire professional career building a KC-centric butchery enterprise — over 21 years in the city as of 2026. Long-tenured staff (some present since the early East Bottoms days) further reflects the shop’s roots in the Kansas City food community.4
