Louie’s Reserve is the new name, as of late August 2026, for the restaurant at 4558 Main Street — the hilltop room east of the Country Club Plaza, with a deck over Mill Creek Park, that Kansas City knew for seventeen years as Café Trio. W. VinZant Restaurants, the local group behind Louie’s Wine Dive, Gram & Dun and a dozen other restaurants, took over Café Trio from founders Chris Youngers and Tai Nguyen in September 2025, ran it for most of a year under the old name (and, briefly, as Emerald Bistro), and has now relaunched it as “the next generation” of its Louie’s Wine Dive concept, promising “a more diverse and sophisticated experience.” This page carries the Café Trio history because no separate Café Trio page exists.
Description
The building at 4558 Main sits on a rise just east of the Country Club Plaza, with the dining room’s rear deck looking down over Mill Creek Park and, from the terrace, across to the J.C. Nichols Fountain.12 For seventeen years it was Café Trio, which billed itself as “hip & glamorous … casual fine dining” built on “the perfect ‘Trio’ of great Local Food, Art and Live Music,” with a Starlet Lounge “complete with Hollywood Starlets and the always playing classic movie,” two bars, specialty martinis, live background piano, and two private dining rooms.23 The room was known in the city for two things beyond the food: Tim Whitmer’s Thursday-night piano, a fixture for nearly twenty years, and Tai Nguyen’s elaborate seasonal decorations for Halloween, Christmas and Valentine’s Day.1 It drew a loyal regular crowd that customers compared to the “Cheers” bar; Tony’s Kansas City characterizes its arc as an upscale gathering place for the city’s LGBT community that evolved into a hangout for progressive local political leaders.14
What Louie’s Reserve will be, in detail, is not yet public. The group’s announcement, as reported August 25, 2026, positions it as “the next generation” of Louie’s Wine Dive — the wine-forward American bar-and-kitchen concept VinZant founded in Des Moines in early 2012 and brought to the Kansas City metro the same year — with “a more diverse and sophisticated experience” than the existing Louie’s Wine Dive locations.45 Louie’s Wine Dive’s founding idea was a list of lesser-known varietals with any bottle available by the glass; VinZant is a certified sommelier and owns a Sonoma vineyard, George Vineyard, whose riesling, rosé, red blend and cabernet are sold under the VinZant label.67 The kitchen lineage is Jacob Hilbert, who came from Stock Hill in September 2025 and whose menu Café Trio and then Emerald Bistro credited as “thoughtfully crafted” from local and regional produce and artisan ingredients.89
Ownership and history
Café Trio, 2004–2025
Chris Youngers, Tai Nguyen and businessman Al Richey were restaurant newcomers when, in November 2003, they bought the 100-seat Papagallo’s (formerly the Athena Greek restaurant) at 3535 Broadway in midtown; they opened it as Café Trio on June 18, 2004, a casual fine-dining room with live music.810 The early days were lean — singer Megan Birdsall sometimes performed to an audience of the three owners — but the place caught on.10 In 2009 the partners moved to 4558 Main, the former Frondizi’s Ristorante (the space had been Venue, then Charlie’s on the Hill from 1996 to 1998, then Frondizi’s from 1999 to 2007), a difficult moment for a move given the 2008 downturn; the staff grew from twelve to fifty.810 Chef Adam Yoder ran the kitchen at the ten-year mark in 2014; by the 2020s the executive chef was Vincent “Vinnie” Ross, and the restaurant claimed multiple Kansas City “Best Of” designations including “Best Overall Restaurant.”102 Richey later exited, leaving Youngers and Nguyen as the owners who greeted guests at the door.82 Several staff spanned nearly the whole run: server Richard Strong from opening day, lead server Cara Mercier from 2009, private-dining manager Lucinda Wandfluh from 2011.1
The VinZant partnership, 2025
In September 2025, after twenty-one years, Youngers (then 52) and Nguyen (53) entered what Whitney VinZant called a “partnership” with W. VinZant Restaurants — new investment and “resources to bear” rather than a buyout, in his telling to the Star.8 Chef Jacob Hilbert, from Stock Hill, took over the kitchen immediately and introduced new dishes; Tyger Barros became general manager; Sunday brunch was under consideration; and Heather White, owner of Tailleur and Cheval, was engaged to redesign the interior in early 2026.8 VinZant said a name change was “possible” in the new year but committed to keeping the signatures: “the only way that I would partner with Tai on it is if he continued to do … his decorations,” and of the piano nights and holiday displays, “I mean, I just love how unique that is for Kansas City. We want to, we’ve got to, keep that stuff going.”81 Youngers and Nguyen agreed to remain day to day through December 2025 and to decide their ongoing role within six months.8 Regulars were less sanguine — former councilwoman Jan Marcuson: “I’m so sad. I haven’t gotten over Tai and Chris leaving … We’ve been going there forever.”1
Emerald Bistro and Louie’s Reserve, 2026
The name did change, apparently twice. Café Trio’s own site was still live under the old name in March 2026.3 A customer review posted around June 2026 reported that the restaurant, “under new ownership” by the VinZant group, “will be transitioning to Emerald Bistro in July,” and a site at emeraldbistrokc.com listed Emerald Bistro at 4558 Main with Executive Chef Jacob Hilbert, the Starlet Lounge, the terrace and two private dining rooms — the Café Trio copy with the name swapped — and hours of Monday–Friday 4–9 p.m. and Saturday 11–2:30 and 4–9.119 By August 28, 2026 that site had been taken down (its host returns a “website you were looking for is not here” page), and on August 25 the Star and Tony’s Kansas City reported W. VinZant Restaurants’ announcement that 4558 Main “will be known as Louie’s Reserve.”954 How long the Emerald Bistro name was actually in use, and whether it was ever more than a placeholder, is an open question below.
W. VinZant Restaurants
Whitney VinZant, a Wake Forest business-and-finance graduate who started at sixteen as a pizza prep cook and is a certified sommelier, opened Louie’s Wine Dive in Des Moines’ Drake neighborhood as his first concept and built the group from there; Kansas City press has counted thirteen to fourteen locations in 2025–26.768 The KC-area portfolio includes Louie’s Wine Dive, BRGR Kitchen + Bar, Taco Republic, Gram & Dun, The BrewTop, Merchants, Waldo Pizza (acquired December 2024), Heritage by Bo Lings (a 2024 partnership) and the now-closed Va Bene, with Fresko and The Latin King in Des Moines and Louie’s in Clayton, Missouri.1213 The group’s site still lists “Cafe Trio” among its brands.12 Kansas City Magazine has described VinZant as a Brookside native; the Registry’s Louie’s Wine Dive page, citing a 2025 Star interview, records him as having relocated to Kansas City around 2010–11 — a conflict noted below.6
