MAPS Coffee & Chocolate roasts specialty coffee in-house and makes chocolate from scratch with clean ingredients at its café in Old Town Lenexa.1 Owner Vincent Rodriguez starts each chocolate bar with cacao, cocoa butter, and turbinado sugar, with no additives, preservatives, or soy lecithin.2 The café occupies the former bike-shop space — reconfigured with seating for roughly 19 — pairing chocolate production with an eco-conscious coffee-roasting operation.2 The shop also offers private sessions teaching how the team roasts coffee and makes chocolate.1

Ownership and history

Owner Vincent Rodriguez left nearly two decades in a corporate job at Starbucks and in 2013 opened a shop where he built handmade bicycles in a back workshop.3 About a year later he bought a coffee roaster and began roasting; word spread through the local cycling community.3 He began making chocolate in 2016 — initially with help from his grandmother’s molcajete, a traditional Mexican grinding tool — and launched Maps Chocolate in 2017.32 By 2018 the coffee and chocolate side had grown enough that Rodriguez sold the bike shop and converted the space into the café.32 A longtime map lover and avid cyclist, Rodriguez chose the name “Maps” to reflect the business’s origins as a Lenexa bike shop.3
