Ownership and history
Owner Vincent Rodriguez left nearly two decades in a corporate job at Starbucks and in 2013 opened a shop where he built handmade bicycles in a back workshop.3 About a year later he bought a coffee roaster and began roasting; word spread through the local cycling community.3 He began making chocolate in 2016 — initially with help from his grandmother’s molcajete, a traditional Mexican grinding tool — and launched Maps Chocolate in 2017.32 By 2018 the coffee and chocolate side had grown enough that Rodriguez sold the bike shop and converted the space into the café.32 A longtime map lover and avid cyclist, Rodriguez chose the name “Maps” to reflect the business’s origins as a Lenexa bike shop.3
