McGregor’s Butcher & Bistro is a dual-concept establishment in Overland Park combining a full-service butcher shop with a French-influenced fine dining bistro and bar, opened in May 2023 by KC-native Mike Gregg and his wife Phyllis as a tribute to their McGregor clan ancestry.1

Description

McGregor’s Butcher & Bistro divides its space between two operations sharing a single address. The butcher shop side carries retail cuts, house-made sausages, charcuterie, specialty ingredients, and prepared sandwiches, sourcing meat through Arrowhead Specialty Meats and seafood through Fortune Fish. The adjoining bistro seats 75 in the dining room plus 30 at the bar, running a French-inspired menu reminiscent of a traditional steakhouse without the stiff dress code.

Chef Erik Fernandez — who came to the project with experience opening Yard House locations nationally — designed a menu built around starters such as Scotch eggs, oysters, and roasted bone marrow alongside entrées of seared scallops, fresh pastas, and grilled King salmon. A signature steak flight presents three four-ounce cuts for tasting alongside optional Scotch whisky pairings. A rotating weekly menu keeps the offering seasonal. The founders characterized their philosophy as an “incredible culinary experience in an environment as comfortable as your own home” — fine dining without stuffiness.1

The operation runs three arms: the full-service butcher department, the bistro with its full bar, and a retail shoppe component that allows walk-in purchases of prepared items and specialty pantry goods. As of 2026, hours include a Wednesday Wine Club and brunch service on Sunday.2

Ownership and history

Mike Gregg is a Kansas City native who spent the majority of his professional life in advertising. He founded Gregg & Associates, a Kansas City advertising agency that operated for 27 years before merging with InQuest Marketing in 2011. His wife and co-owner Phyllis Gregg joined him in launching the business as their first restaurant venture.

The concept grew from a long-held ambition Mike Gregg described as always in the back of his mind: the idea of combining a quality meat shop with a specialty restaurant. The name honors his Scottish family heritage — he traces the McGregor clan lineage to Scotland’s 9th century, noting that under King James VI, bearing the McGregor name was punishable by death, and that his ancestors eventually fled and adopted the anglicized surname Gregg upon settling in America. The business became, in Gregg’s words, a way of “giving the name back.” The butcher shop opened May 10, 2023, with the bistro following three days later.1
