Porky’s Blazin’ Bar-B-Q is a weekend-only barbecue joint in a century-old red barn on Buckner Tarsney Road, five miles south of Grain Valley — open Friday, Saturday and Sunday lunch, hickory-and-cherry smoke, no propane. Scott Roberts, an Air Force veteran and second-generation pitmaster whose father ran Mozarks in Clinton, bought the business in March 2016 and runs it with his son and daughter; the name and recipes go back roughly 20 years to a prior owner, and the family marked the 20-year milestone in 2026. Ribs, brisket and burnt ends sell out first; the sauces on the table come in mild, sweet and hot.

Description

Porky’s sits alone on a rural stretch of South Buckner Tarsney Road in the farm country between Grain Valley and Lake Lotawana.1 The building is a red barn — “an old general store” that Roberts puts at about 112 years old, which once sold gas and ice and, by local account, hosted Jackson County’s first vote; inside are cushioned benches and old-time décor.23 It is open only three days a week and the meats run until they are gone; the site advises calling ahead for ribs and brisket.45

The smoke is the point. “We don’t use any propane. We start with hickory and cherry.

Kansas City Homes & Style, listing it among the area’s “hidden gems” in 2023, called brisket, burnt ends and ribs the top sellers and quoted Makayla Roberts: “We’ve added a number of sides, and we’ve figured out ways to improve on the smoked meats.”1 disKCovery’s Devan Dignan, in the “Year of the Pit” series, singled out the baby backs and the thin-sliced lean brisket.2

Ownership and history

Scott Roberts is the son of Dennis Roberts, who opened a barbecue restaurant called Mozarks in Clinton, Missouri, in 1988 and, in the site’s telling, “taught him the family pit master secrets on how to create meat so tender it melted in your mouth.”46 Scott worked in his father’s restaurant, served in the U.S. Air Force, and then spent roughly 25 years in construction, owning his own company for more than 20 of them.62 Dennis Roberts died of cancer in 2009.6

In March 2016 Roberts bought Porky’s Blazin Bar-B-Q — the name, the equipment and the recipes — from its previous owner, and has run it since as a family operation, with his daughter on the order window and other relatives through the kitchen.612 Homes & Style’s 2023 profile compresses the timeline to “about 20 years ago” Roberts “caught the bbq bug” and made the offer; the site’s own account (2016) is the more specific and is used here.16 The restaurant’s Facebook page marks Porky’s as “family owned for 20 years,” which places the original opening under the prior owner around 2006; the prior owner’s name is not published.7 The site credits Porky’s with “several first place prizes during local barbeque competitions,” unnamed.4

“It’s about taking care of my customers. Period,” Roberts told disKCovery. “I consider almost everyone that comes through the door to be family.”2
