Post Coffee Company is a locally owned specialty coffee roaster and café founded in Lee’s Summit, Missouri on January 1, 2015 by Tanner Stevens and Levi Holland (with their spouses Elizabeth Stevens and Katie Holland as equal partners). Post roasts small-batch, direct-trade beans on-site on a 5-kilogram Detrix drum roaster and has grown from a single Chipman Road storefront to a small group of metro cafés — including its Westside sister concept Goat Hill Coffee & Soda — alongside a wholesale and whole-bean subscription business.123

Description

Post Coffee Company is a specialty coffee roaster and café that opened in downtown Lee’s Summit on January 1, 2015. The concept pairs an in-house roasting operation with a café space designed around “open and clean” lines and natural light, intended as a welcoming room “where anyone could walk in and feel welcomed.”2

Coffee is roasted in small batches on-site using a 5-kilogram Detrix drum roaster, with roasting historically observable to guests during shop hours. Post emphasizes direct-trade sourcing — co-founder Tanner Stevens has described the model as coffee that “can be traced back to a specific co-op and directly to a specific farm.” Single-origin offerings rotate roughly every two to three months while signature blends stay available year-round.12 Early bean sourcing ran through importers including Bodhi Leaf Coffee Traders (Orange, CA) and Café Kapeh-Utz (Kansas City).1

Beyond the café, Post operates a wholesale program, whole-bean subscriptions, and retail bean sales, and has partnered with Made in KC to produce a house blend for its marketplaces.32

Ownership and history

Post Coffee Company was founded by Tanner Stevens and Levi Holland; per a 2020 profile, the ownership group consists of four equal partners — Tanner and Elizabeth Stevens and Levi and Katie Holland.2 Stevens had previously helped found Quay Coffee in Kansas City’s River Market before launching Post.14 Holland’s path into coffee began in college working for Trevor Corlett (a Madcap Coffee co-founder), where he first observed small-scale roasting.2

The original café opened January 1, 2015 at 200 NE Chipman Rd in Lee’s Summit.1 In 2016, Stevens and Holland opened Goat Hill Coffee & Soda on the Kansas City Westside (811 W 17th St), moving into the former Little Freshie space.4 Post has since added a Colbern Road location (1000 NE Colbern Rd, co-located with the Mid-Continent Public Library Colbern Road branch) and a Broadway/Midtown café in the historic Ambassador building.32 The Colbern Road address is the seed record’s listed location and is confirmed as an active Post café.5

[!note] On the seed “Quay” second-location note The seed flagged a possible “Quay” second location. Sources clarify the relationship: Quay Coffee is a separate River Market business that Stevens helped found before Post; it is not a Post Coffee Company location. Post’s actual second concept is Goat Hill.14
