Primos is Kansas City’s dedicated Puerto Rican restaurant — opened May 5, 2024 (Cinco de Mayo) by Jorge Ivan Rivera Santiago inside the Crossroads Food Stop at 1600 Campbell Street. Rivera Santiago was born and raised in Puerto Rico until age 10, then lived in Florida before his military career brought him to Fort Leavenworth, Kansas, as a military police officer. He settled in the KC metro after service and opened Primos as the metro’s only exclusively Puerto Rican restaurant. The menu is a statement of island identity: empanadillas (Puerto Rican fried turnovers), fried plantains, pincho de pollo (Puerto Rican-style chicken skewers), yuca frita, and the Boribowl — Rivera Santiago’s signature, marinated pork served over a mofongo base.
