It opened in January 2014, built around the traditional nigiri, sashimi, and maki that chef-owner Sam Hoang had specialized in for nearly two decades by that point.1 The kitchen pairs that classic foundation with more modern Japanese seafood preparations introduced by Sam’s son, Peter Hoang, who joined the restaurant from a chef career in Chicago.1
The restaurant is best known among local diners for its omakase service — a chef-directed tasting format available by reservation, in which the chef builds each course from the day’s available fish rather than a fixed menu. Ownership and history
Sakae Sushi is owned by Sam Hoang, a longtime Kansas City–area sushi chef, in partnership with his son Peter Hoang.1 Before opening Sakae, Sam owned and operated Wasahi Japanese Steakhouse & Sushi Bar in the Northland for many years, building a multi-decade reputation in the metro’s Japanese-dining scene.1 When Sam was ready to open Sakae in Parkville, Peter — who had moved to Chicago to become executive chef at Kamehachi — returned home to work side by side with his father at the new family restaurant.1
The Hoang family is effectively a Kansas City sushi dynasty, and Sakae is its anchor.
