Snack Bar is a Mexican street-food and cocktails spot in Lenexa, Kansas, opened at the end of December 2024 by veteran KC-area restaurateurs Oscar Romero and Norberto Romero, serving tortas, elote, aguas frescas, and ice cream in a grab-and-go format at 7789 Quivira Road.
Description
Snack Bar is a “bar and bites” concept serving Mexican street food and cocktails in the Lenexa Plaza shopping center, just off West 79th Street and Quivira Road.1 The menu features casual bites like tortas (Mexican sandwiches), elote (Mexican street corn), burritos, wraps, and salads, alongside sweets including ice cream, crepes, and homemade aguas frescas.1 On the cocktail side, it offers margaritas, sangria, palomas, and micheladas.1 While the location features some seating, the primary concept is grab-and-go.2
The owners say the concept reflects the casual street-food style that has become popular in Mexico, inspired by their families’ history working as street vendors.12 Hours are 9 a.m. to 9 p.m. Monday through Saturday and 9 a.m. to 8 p.m. Sunday.1
Ownership and history
Snack Bar is co-owned by Oscar Romero and Norberto Romero, who are not related despite sharing a surname.1 Both are originally from Turitzio, Michoacán, Mexico, and their families worked as street vendors in Houston.1 Oscar Romero also owns and operates AR’s Breakfast and Brunch, a popular breakfast eatery with locations in Overland Park and Olathe.12 Norberto Romero previously managed O’Neill’s Restaurant & Bar in Leawood for 23 of its nearly 25 years in operation.1
The restaurant softly opened at the end of December 2024, taking over the space formerly occupied by Papagallo Gyro Cafe, an Italian and Mediterranean cafe that closed in 2024.12

Disputes
- Owner relationship / shared hometown: Some secondary aggregators (Facebook restaurant-listing repost; herekansascity.com) state the two Romeros are from “the same town in Mexico.” The primary source (Johnson County Post) states they are “not related despite shared surname” but both originally from Turitzio, Michoacán. This page follows the primary source: same hometown, no family relation.
