Original Juan Specialty Foods was founded in Kansas City by Joe Polo in the late 1990s; the operation began producing hot sauces in 1999 out of a 17,000-square-foot former car dealership before relocating in 2002 to its current 60,000-square-foot Southwest Boulevard headquarters.13 Polo and his wife, Christine, built the business over roughly two decades.1
