Description

Swordfish Tom’s is an intimate, speakeasy-inspired craft-cocktail bar in the Crossroads Arts District of Kansas City. It is reached not through a storefront but by pulling open a metal door in an alleyway and descending a stairwell; at the bottom, a light beside the door governs entry — when it glows green there is an open seat and guests knock, while red signals the room’s 30 seats are full and to wait.12 The bar specializes exclusively in premium spirits and expertly crafted cocktails, serving no beer, no wine, and no food, in a refined-yet-casual setting designed for conversation rather than volume.34

Swordfish Tom’s is owned and operated by Jill Cockson, a veteran bartender and hospitality professional. Before Kansas City, Cockson was the brand developer, co-creator, and managing partner of The Other Room in Lincoln, Nebraska — a roughly 20-seat speakeasy in Lincoln’s Haymarket district whose cocktail program earned a James Beard Award semifinalist nod for Outstanding Bar Program (2015), the only such recognition for a Nebraska bar at the time.674 She relocated to Kansas City, where she had previously lived, and announced plans for Swordfish Tom’s in the Crossroads in 2016, opening the bar in 2017.842

The bar’s name is an allusion to Cockson’s favorite singer-songwriter, Tom Waits, and his 1983 album Swordfishtrombones.42 Swordfish Tom’s quickly became one of Kansas City’s most recognized cocktail destinations, drawing repeated coverage from local and regional press and helping establish Cockson as one of the city’s leading bar figures. She has since opened additional Crossroads concepts — including Chartreuse Saloon, an East Crossroads saloon and pool hall — extending her footprint in Kansas City’s cocktail scene.910 Swordfish Tom’s remains independently and locally owned, with no corporate parent.
