Description

The Combine KC occupies the former Wonder Bread factory building at the corner of 30th Street and Troost Avenue in Kansas City, Missouri. The restaurant serves pizza and sandwiches from the ground-floor kitchen and dining space, while the building’s rooftop is configured as a catered event and community space accommodating up to 220 guests. The Combine is not a walk-in rooftop bar — the rooftop is used for private events, programming, and community gatherings rather than daily public service.¹²³

The concept was explicitly designed to serve and anchor the Troost corridor — a historically dividing line in Kansas City — as a unifying neighborhood institution. The Combine’s name reflects this intent: a “combine” is a machine that brings disparate things together.¹ Flatland KC coverage described the restaurant as having “an appetite for unifying Troost.”¹

Ownership and history

Alan Kneeland is a Kansas City native who entered the restaurant industry as a dishwasher and worked his way through kitchen and management roles before co-founding The Combine.³ He opened The Combine with Jason Pryor and Charles Peach in November 2020 in the Wonder Bread factory building at 2999 Troost.¹²

The building had historical resonance in Kansas City before The Combine’s arrival: the Wonder Bread factory at 30th and Troost was a neighborhood anchor for decades.
