Founding

Jose Barrios worked in sales in Mexico before relocating to the Kansas City area, where he took construction jobs and worked in fast food and breakfast and Mexican restaurants, often holding two jobs simultaneously — starting at 5 am and ending at 10 pm. That accumulated experience in food service informed his decision to open his own restaurant.²

Barrios opened The Royal Biscuit in 2019 at 1428 W 40 Hwy in Blue Springs. He also owns Odessa Creamery in the Kansas City area. He has worked with U.S. Bank’s Blue Springs North branch to support business expansion and has publicly stated his intention to open a second Royal Biscuit location.²
