The Town Company is a chef-driven regional-American restaurant inside the Hotel Kansas City downtown, opened in fall 2020. Conceived by KC-native chef Patrick Ryan (Port Fonda) and operated by the local husband-and-wife team of executive chef Johnny Leach and pastry chef Helen Jo Leach — the same team behind sibling restaurant Dear Donna — it builds a hearth-fired, locally sourced menu around Kansas City’s culinary traditions. Though housed in a Hyatt Unbound Collection hotel, the restaurant is independently operated by its local culinary team.

Description

The Town Company is a chef-driven, regional-American restaurant on the ground floor of Hotel Kansas City in downtown KC. The concept celebrates Kansas City’s culinary traditions — steaks, whole fish, and smoke- and fire-cooked proteins — through a seasonally rotating menu built around a white-oak burning hearth and a network of local farmers, ranchers, and purveyors. The intimate room seats about 64, including roughly a dozen seats at the open kitchen hearth, and all breads, pastries, and desserts are made in-house daily.

The restaurant occupies a restored, century-old Gothic Revival building that originally housed the Kansas City Club; the building was redeveloped into Hotel Kansas City, which opened in 2020 as part of Hyatt’s Unbound Collection. A companion basement cocktail bar, El Gold, opened alongside the restaurant. While the restaurant sits within a hotel operated under a Hyatt soft brand, its food-and-beverage program is run by a local culinary team rather than by the hotel chain.

Ownership and history

The Town Company was conceived by Kansas City chef Patrick Ryan, best known for the Latin-inspired Port Fonda. Ryan has said he envisioned the restaurant as far back as 2004 and named it after the Town Company — the group of investors who pooled resources in the 1830s–1840s to purchase and incorporate the land that became Kansas City, Missouri. Ryan serves as chef-partner on the project; in his own framing, his role was to set the kitchen up to succeed and then “get out of their way.”

Day-to-day kitchen leadership belongs to the husband-and-wife team of executive chef Johnny Leach and executive pastry chef Helen Jo Leach. Both came to Kansas City with résumés from high-profile New York kitchens — Johnny at Town, Del Posto, and Momofuku; Helen Jo at Eleven Madison Park, Milk Bar, and Del Posto — and have helmed The Town Company since its fall 2020 opening. The Leaches have since become deeply rooted in Kansas City’s dining scene and have earned James Beard Foundation semifinalist recognition for their work at the restaurant.

In 2026 the Leaches expanded their footprint locally, buying the former Happy Gillis space in the Columbus Park / Pendleton Heights area of the historic Northeast and opening Dear Donna — a more casual, counter-service café named for Johnny Leach’s mother, Donna Bennett. The Leaches stated they would continue to helm the kitchen at The Town Company while offering Kansas City “a new price point and perspective” at Dear Donna, making the two restaurants sibling concepts under the same local culinary team.
