69 Sushi is a 168-seat all-you-can-eat sushi restaurant in the Stanley Square shopping center at 151st Street and U.S. 69 in south Overland Park — the highway supplies the name. It opened in April 2026 in the enlarged former Top Soup Yunnan Noodle space under owner-manager Emily Wu, who came to Kansas from China by way of Wichita State University and says she built the place for people who, like her, love sushi but balk at a $100 dinner for two. Flat pricing by daypart ($21.99 weekday lunch, $26.99 weekday dinner, $31.99 Friday–Sunday) covers rolls, sashimi, hand rolls and a kitchen menu that runs to fried chicken, oysters, lamb chops and seafood boil.
Description
69 Sushi took over the former Top Soup Yunnan Noodle in Stanley Square, then knocked through the wall to the storefront next door, adding roughly 1,000 square feet.12 The Star’s Jenna Thompson found the sign changed and the windows “covered in window decals of sushi rolls” when she visited in mid-April 2026; inside are 168 seats “between its sizable booths and small, square tables.”2 The format is a seated buffet: “customers walk in and are seated, then are free to pick up a plate (or two) and pile it high with as many sushi rolls as they desire.”2 A separate menu handles online and to-go orders.1
The sushi side runs from classic rolls (Philadelphia) to house specialties like the Jayhawk roll (cream cheese, avocado, shrimp tempura, spicy tuna), sashimi with ginger and wasabi, and assorted hand rolls in seaweed cones.2 “But it’s not just sushi rolls,” the Star noted: the kitchen also sends out fried chicken, oysters, tiramisu, lamb chops, fried rice, noodles and seafood boil, and the Johnson County Post’s preview listed General Tso’s chicken, ramen, stir-fry noodles, dumplings and egg rolls among rotating specials.21 Wu’s stated motive is price: “I personally really like sushi, and it’s always so expensive. Sometimes you go to a sushi restaurant, two people, and you can spend like $100.”1 “We’re trying our best to make it a neighborhood restaurant, so people can stop by for lunch or need a break from their work,” she told the Star.2
Pricing is flat by daypart — $21.99 for weekday lunch, $26.99 for weekday dinner, $31.99 all day Friday through Sunday — and the restaurant closes between lunch and dinner on weekdays “to ensure dinner is fresh and up to standard.”23 The Instagram bio reads “Proudly KC-owned. Come hungry. Open 7 days a week.”4
Ownership and history
Emily Wu is the owner and manager. She “hails from China and has been in the U.S. for more than a decade, originally coming over to attend Wichita State University before marrying and settling down in Kansas.”2 She is in business with Lucky Guo, whom she has known for more than ten years; Guo’s role is not described.2 Wu told the Post she had worked in sushi restaurants before going into business for herself.1
The two press accounts diverge on her relationship to the predecessor. The Johnson County Post reported in April 2026 that Wu “previously operated Top Soup Yunnan Noodle at the same location for roughly two years before closing”; the Star reported the same month that Wu “said she knew the Top Soup Yunnan owners and made an agreement to take over the space.”12 Both are attributed to Wu; whether she owned Top Soup or merely knew its owners is left open below.
The Post previewed the restaurant on April 7, 2026 as opening “in the coming weeks”; the Star reported it open “a few days ago” on April 13, and included it in its April 29 roundup of fifteen KC openings — the “endless sushi” of the headline.123 Local food creators’ reels and carousels have filled the Instagram feed from May through August 2026.4
The space
Stanley Square is the shopping center on the north side of 151st Street just east of U.S. 69, where Top Soup Yunnan Noodle had been listed at 7948 W. 151st; after the expansion 69 Sushi gives its address as 7956, and the Post’s preview used 7948 — the two numbers are the combined storefronts.512 Sammie’s Kitchen & Bar sits across 151st in Stanley Station (see sammies-kitchen-and-bar), and Te Amo Cafe, a boba shop that opened the same month, is a few doors down at 7932.3

Menu status: unverified. No first-party itemized menu is published as text: the restaurant’s KwickPOS ordering site renders in browse-only mode with no items off-premises, and the Instagram feed carries only photographs.64 The all-you-can-eat prices above are from the Star’s April 2026 reporting and are recorded in the Infobox rather than as a menu.2 A visit or a scan of the printed AYCE menu is needed before a Menu section can be written.
