Description

B’s is a walk-up window on Belton’s Main Street selling New York–style bagels and bialys made on site, open two days a week. Bagels are boiled and then baked in the traditional manner. Flavours run from savoury — jalapeño cheese, plain, asiago, Everything — to sweet: French toast, cinnamon raisin, chocolate chip. Steel has noted the rainbow-coloured bagel is the one children ask for.1

The bialy — a flatter, unboiled cousin of the bagel, conventionally filled with onions and poppy seeds — is the shop’s signature and, Steel emphasises to unfamiliar Midwestern customers, “not a pastry.” Alongside the traditional version she makes a savoury bialy packed with sausage, bacon, egg and cheese, and a plate-sized sweet one loaded with brown sugar, apple and cinnamon.1

Ownership and history

B’s Bagels & Bialys is owned by Barbara Steel and her husband Tim Yearout. They opened the walk-up storefront on Veterans Day 2023 — 11 November 2023 — choosing Belton’s Main Street because it was close to their home in the area. Yearout grew up in Lee’s Summit; Steel is from Long Island, New York.1

Steel grew up in the restaurant business and started the shop to fill what she saw as a local gap in East Coast–style baking. “I couldn’t get good bagels here,” she told the Martin City Telegraph. “We’re a mom-and-pop shop. Built from the ground up. Only family works here. All of our treats are made by hand.”1
