Carmen’s Cocina II is the Araujo family’s Mexican restaurant at 15926 Mur-len Rd in Olathe — founded March 2012 by Luis and Judy Araujo, now run by daughters Ashlee and Carlee Araujo. Luis originally designed the hours around school schedules (“I wanted to be able to attend school activities and pick up the children from school”); when Luis and Judy left to plant a church in northwest Indiana, Ashlee and Carlee kept the restaurant running. Description

Carmen’s Cocina II is the Araujo family’s home-style Mexican restaurant in south Olathe — founded in March 2012 by Luis and Judy Araujo, and now operated by their daughters Ashlee and Carlee Araujo. Luis Araujo intentionally designed the restaurant’s limited hours (“I wanted to be able to attend school activities and pick up the children from school from school”); when Luis and Judy eventually left to plant a church in northwest Indiana, Ashlee and Carlee stepped up to keep the restaurant running. The menu is built on Judy Araujo’s home cooking — Ashlee describes it as “honestly what my mom always fed us at home” — with homemade taco shells, house salsas, fresh-cut meats, and tamales available on select days.
