Dixon’s Famous Chili is a century-old, family-owned chili parlor in Independence, Missouri, serving Vergne Dixon’s distinctive dry, bean-and-beef Kansas City–style chili since 1919. Reputed to be the longest-running family-owned restaurant in the KC metro and a documented favorite of President Harry S. Truman, it is run today by Dixon’s great-niece Terri Totta-Smith and her son Stephen Steffes.

Description

Dixon’s Famous Chili serves a distinctly Kansas City–style chili: a dry, thick preparation of ground beef and beans cooked and seasoned lightly, served layered with the beans beneath the meat rather than ladled in a soupy bowl.12 Diners specify a consistency — “juicy” (with meat juices), “soupy” (with bean broth), or “dry” — and choose toppings.2 Founder Vergne Dixon was famously anti-tomato and rejected ketchup; the parlor preserves the tradition with a symbolic ten-cent charge for ketchup.2 The menu extends the chili across formats including chili dogs, tamales, and spaghetti chili.23

The original parlor was known for a brisk, no-lingering ethos: Dixon reportedly banned smoking, reading, and phone calls so the line kept moving.1

Ownership and history

Dixon’s was founded by Vergne Dixon, a Texas native, who began selling chili from a street cart in downtown Kansas City before opening a brick-and-mortar chili parlor at the corner of 15th and Olive in Kansas City, Missouri, on August 10, 1919.13 His recipe was reportedly developed from years in his mother’s kitchen.3

President Harry S. Truman, an Independence native, became a documented patron beginning in the 1920s and remained a regular for decades; he ordered Dixon’s takeout during his presidency and made a widely covered visit on December 23, 1950.2 A table associated with Truman is preserved at the restaurant.3

The business expanded substantially in the mid-20th century — the original 15th & Olive location closed in 1969, a second location opened in Independence in the late 1960s, and the chain reached roughly 16 locations during a 1970s expansion before contracting; by 1999 only two parlors remained, and the operation consolidated to the single surviving location at U.S. Highway 40 and Blue Ridge Cutoff in Independence.2

The restaurant has remained in the Dixon family for over a century and is described as the longest family-owned restaurant in the Kansas City metro.14 It is run today by Vergne Dixon’s great-niece, Terri Totta-Smith, together with her son Stephen Steffes.14 The current generation is described variously as the family’s fourth and fifth generations carrying the recipe forward, though at least one account refers loosely to the “third generation,” so the precise generation count is.45
