Description

Don Chilito’s Mexican Restaurant was a cafeteria-style Tex-Mex restaurant at 7017 Johnson Drive in Mission, Kansas, on the heavily traveled Johnson Drive dining strip in Johnson County.12 Patrons walked in to a long stainless-steel cafeteria line, grabbed a tray, silverware, and napkins, and ordered down the line — an “old-school” counter format that the restaurant kept essentially unchanged for decades.3

The menu was affordable, filling, classic Tex-Mex/Cal-Mex: hard-shell tacos made to order, burritos and chimichangas, taco salads, chips and queso, and a roster of sauce choices including the house orange cheese sauce known as “CCQ,” a red sauce, and chili con carne.3 The restaurant was widely associated with its smothered burritos and with all-you-can-eat sopapillas, and it kept a large bin of complimentary tortilla chips on the line.13 The interior was an unapologetically retro 1970s–80s space — aged ceramic tile, wooden booths, painted lattice, murals, and neon beer signs — and the restaurant was frequently described as having an “almost admirable resistance to any restaurant trend.”3

Don Chilito’s was a polarizing but deeply beloved Johnson County mainstay: not a destination for “authentic” regional Mexican cooking, but a generational community fixture that drew loyal customers across decades.12

Ownership and history

Bill Cowden opened Don Chilito’s at 7017 Johnson Drive in 1971.12 His son Barry Cowden began working at the restaurant in 1977 at age 13 and eventually became the second-generation owner-operator, running it through its final years.2

The restaurant operated continuously at the same single Johnson Drive address for 50 years. Ownership remained within the Cowden family the entire time — a founder-to-son family succession with no corporate parent and no second location at closing.12

Barry Cowden announced the closure in September 2021, framing 50 years as a milestone target he had wanted to reach: “I wanted to make it to 50 years, that was like a milestone. There’s very few restaurants in history that make it that long.”24 Don Chilito’s served its final day on December 10, 2021 (some coverage cites December 11), after which Cowden retired.245 By the restaurant’s account it had served third- and fourth-generation customers over its run.1

The former space was subsequently taken over by The Big Biscuit, a breakfast restaurant.6
