F325 BBQ is a full-service barbecue restaurant and whiskey bar on Buchanan Street in North Kansas City, opened in late 2022 by James and Lisa Huey in the former LC’s Hamburgers building next door to Cinder Block Brewery. The name is the temperature: James Huey, a former competition cook, smokes hot and fast over pecan rather than low and slow, and the couple insisted on table service, real plates and linen napkins — “somewhere to sit down and eat it, not your car, not your desk.” Burnt ends, house-made kielbasa, a Bar-B-Cuban, a hand-ground brisket burger, a spinach-artichoke mac and cheese, and one of the larger bourbon lists in the Northland; The Infatuation puts it on its ranked list of the best barbecue in Kansas City.

Description

F325 occupies the old LC’s Hamburgers building on Buchanan Street, one door from Cinder Block Brewery — close enough that the brewery keeps an F325 ordering kiosk in its taproom and has the food walked over to your table.123 Inside it is deliberately a restaurant rather than a counter: servers, plates, linen napkins, a full bar, live music nights. Lisa Huey’s rationale to Kansas City Magazine: “You need somewhere to sit down and eat it — not your car, not your desk.”1

The cooking is James Huey’s competition background applied at a higher temperature than most Kansas City pits. “I cooked at 225 degrees, low and slow, for years,” he said; after learning to cook hotter he “enjoyed the flavor better,” and while he cannot run restaurant ribs at a full 325, “I can cook them well above where they normally are.” He smokes with pecan, a wood more associated with Texas and Memphis than KC.1 The Infatuation’s Ryan Bernsten, ranking the city’s barbecue in 2024, wrote that F325 is “one of the newer BBQ joints on the scene, but they’ve done their homework,” singling out the three-meat plate of “tender burnt ends and well-spiced homemade kielbasa,” the brisket burger and the fried pickles, and tagging it for happy hours and live music.3

The menu runs from one-, two- and three-meat plates (pulled pork, brisket, burnt ends, house kielbasa, turkey, ham, with a mini cornbread muffin) and rib plates to a set of named sandwiches — the Royal Burnt Ends, the Stockyard brisket-and-slaw, the Bar-B-Cuban on a Cuban baguette with smoked ham and pulled pork, the Spitfire pulled pork with jalapeño apple jelly, the Call a Dr of brisket, pork and kielbasa, and a hand-ground brisket burger with pimento cheese and barbecue aioli. Sides are the point of pride: a granny-smith-apple coleslaw, cavatappi mac in a smoked spinach-artichoke cheese sauce, a whiskey sweet-potato casserole, smoked baked beans, collards.45 Pulled jackfruit and a smoked portobello cover vegetarians.4

Ownership and history

James Huey was a traveling salesman for Wear-Concepts, a Liberty-based industrial equipment supplier, when coworkers introduced him to competition barbecue; he competed for about five years beginning in the late 2000s. Lisa Huey worked the contests with him and “developed her own passion for barbecue.” The couple’s original plan was to semi-retire to South Carolina or northern Georgia with a food truck.1

Instead, in October 2020, during the pandemic, they launched the Fahrenheit 325° Barbeque food truck — named for the temperature they cooked at — which they described as a “stepping stone” to a restaurant; they bought the truck during COVID and catered manufacturing-plant shutdowns in Iowa.61 The LC’s Hamburgers space in North Kansas City came available, and F325 BBQ opened there around November 2022 as a sit-down restaurant positioned, in Kansas City Magazine’s comparison, closer to Jack Stack and Q39 than to a counter joint.1 Early features noted brisket, competition-style ribs, turkey brined and pulled at 165°F, an extensive bourbon list and Jell-O-shot specials.1 A regional blog that visited twice in the restaurant’s first six months summarized the reception as “good news travels fast.”5 The restaurant’s ordering app is published under Lisa Huey’s name, suggesting she runs the business side.7
