Jade Jaguar is a Mexico City-inspired cocktail bar (“cocteleria”) on the ground floor of the REVERB building at 1800 Walnut St, Suite 100, in the Crossroads Arts District. It opened mid-October 2025 in the former Bar Medici space, as a partnership between Manny Gomez, Seth Goldwasser and the KC hospitality group Exit Strategy — the same group behind The Mercury Room and Verdigris. Description
Jade Jaguar is a cocktail bar at 1800 Walnut Street, Suite 100, occupying the ground-floor retail space of the REVERB building in the Crossroads Arts District. It opened in mid-October 2025 in the space previously occupied by Bar Medici, an upscale Italian bar-restaurant run by the same hospitality group.12
The bar is a partnership between Manny Gomez, originally from Guadalajara, Seth Goldwasser, formerly bar manager at The Town Company, and Exit Strategy, the Kansas City hospitality group that also operates The Mercury Room and Verdigris and consulted on The Monarch.13 Jade Jaguar is the group’s fourth concept.1
The name references the jade-inlaid red jaguar throne found in an inner chamber of El Castillo at Chichén Itzá.23 The room was redesigned in mint green by Manica Architecture, with movable tables so the floor can be cleared for DJs, live music and dancing; an “el bailongo” tropical-music night runs every other Wednesday.2 Capacity at opening was reported as 28 seats plus standing room.1
The opening drink list ran twelve cocktails — six riffs on classics (margarita, paloma, mojito, Oaxaca old fashioned) and six originals — with each drink keyed to a card from Lotería.13 Gomez has framed the program as deliberately broad rather than spirit-specific: “It’s not an agave bar or mezcal bar. It’s a Mexico City-style bar, which means diversity.”1 Reported drinks include the namesake Jade Jaguar (tequila, cilantro, ancho chile, melon) and La Bandera, a mezcal cocktail with hoja santa-infused vermouth finished tableside.23 Food is Mexican botanas from chef Josiah Nielsen — chicharrones, guacamole, tuna tostadas, sopes, queso fundido and a Sonoran-style smash burger — with horchata ice cream and caramelized pineapple sorbet for dessert, and a coffee partnership with Café Ollama.12
