Description
Krizman’s is a sausage plant with a retail storefront on the north slope of Strawberry Hill, the historically Croatian and Eastern European neighborhood overlooking the Kansas and Missouri river bottoms in Kansas City, Kansas. The company describes itself as making “hand-crafted sausage and delicious sides since 1939,” and sells fresh and smoked sausages, ethnic foods, barbecue rubs and seasonings direct to consumers as well as wholesale.1
The business has also been referred to in regional food press by its older name, Krizman’s House of Sausage.2 The shop is a fixture on Strawberry Hill visitor itineraries published by the local tourism office, which lists it alongside the neighborhood’s other heritage food stops.34
Ownership and history
The business began as a small corner grocery founded in 1939 by Joseph Krizman Sr. and his brother-in-law Matt Grisnik, both Croatian immigrants. The store produced sausage from recipes brought from Croatia, sold from the grocery counter.15
Joseph Krizman Jr. bought out the Grisnik interest in 1972. Judging corner groceries a declining format, he razed the original store, built the current plant on the site, and refocused the company on wholesale sausage distribution to restaurants — renaming it simply Krizman’s Sausage.15
The company is now run by Joseph Krizman III, who is profiled by the Wyandotte County tourism office as the current-generation operator.6 Krizman’s own account frames the current era as coming “full circle” — back toward retail sales to home cooks, which the company attributes in part to the rise of cooking shows and competition barbecue culture.1
