Pie Time is a small pie shop at 111 N. Water Street, a half block off the Liberty square, opened in December 2018 by Christine Crouch, a former air-traffic controller and Liberty Public Schools employee who had run an event venue in town before turning her baking into a business. It sells whole 9-inch pies — coconut cream, key lime, Dutch apple, French silk, pecan, strawberry rhubarb and a dozen more at $27–28 — plus hand pies, cookies, sampler boxes, take-and-bake chicken pot pies and quiche, and its own pie crust and dough for home bakers. Hours are short (three afternoons a week) and much of the business is pre-ordered online, especially in the run-up to Thanksgiving.

Description

Pie Time sits on North Water Street just off the Liberty square; the same address houses Icebergs Italian Ice & Gelato, and a 2019 Tripadvisor reviewer titled a review of the neighboring Bittersweet apothecary shop “Hidden Pie Time,” which fits the shop’s tucked-away location.12 The William Jewell student paper, profiling the shop three months after it opened, described a homey space and a counter of mini pies, hand pies (chocolate and cherry singled out), cookies and cakes, with sampler boxes for people who cannot choose.3

The core product is the whole 9-inch pie, all made on a handmade crust. The current ordering menu lists nineteen: cream and chilled pies (coconut cream, banana cream, key lime, lemon icebox, French silk, peanut butter chocolate, chocolate meringue), fruit pies with a choice of lattice or crumble top (cherry, blueberry, peach, triple berry, strawberry rhubarb, Dutch apple, blueberry sour cream, raisin sour cream) and the holiday standards (pumpkin, pecan, chocolate pecan).4 Savory items are take-and-bake: chicken pot pie in a double crust, and quiche in seven varieties from Lorraine to bacon-spinach-Swiss, both sold frozen.4 The shop also sells its unbaked crust and rounds of dough for home use, and a “Citrus Box” sampler of lemon sandwich cookies, mini key lime and lemon icebox pies and orange-carrot muffins.4 Diners on review sites single out the take-and-bake chicken pot pie, key lime, lemon icebox and cowboy cookies.5

The ordering page also shows how the shop paces its autumn: separate pre-order windows with “last week to order” cutoffs for pot pies (Oct 19–24), quiche (Oct 26–31), take-and-bake fruit pies (Nov 2–7) and freezer/heat-and-eat pies (Nov 9–14), i.e., the Thanksgiving pipeline.4 In 2021 the shop told KC Homes & Style it was offering ten pies plus a quiche for the holiday.6

Ownership and history

Christine Crouch opened Pie Time on December 8, 2018, per a March 2019 feature in William Jewell’s Hilltop Monitor.3 Her path to pie was indirect: she had worked as an air-traffic controller and for Liberty Public Schools, and before the bakery she ran an event venue in Liberty. She traces the baking itself to 4-H cooking classes with her grandmother at nine or ten; her favorite pies to make are chocolate, peanut butter and cherry.3 She chose the square because “a lot more people want to come down here and shop so it has a very homey feel.”3 To KC Homes & Style in 2021: “After working as an Air Traffic Controller and in the education field, I found an opportunity to start my own business doing something I’m passionate about. I decided to open a pie shop because I have always enjoyed baking and cooking.”6

No later press profiles the shop; its footprint since has been the Wix site, a Facebook page, and directory listings by Clay County tourism and the City of Liberty.71 Where Crouch lives, whether she still bakes alone or has staff, and the predecessor tenant at 111 N. Water are unresearched.
