Pizza Kraft

Pizza Kraft (“Salads, subs & pies”) is the pizza and sandwich kitchen inside Strang Hall, the food hall at 7313 W 80th St in downtown Overland Park, Kansas.¹² It is a rename of the hall’s own Norcini kitchen, carried out in early 2026: the old stranghall.com/norcini URL now 301-redirects to the Pizza Kraft page, the concept copy about “the traveling butchers from the foothills of Norcia” is carried over verbatim, the same chef biography (Doug McNay) remains attached, and the Yelp listing for Norcini now displays as Pizza Kraft.³¹⁴ Chef Doug McNay and general manager Ryan Kramer presented the new concept on KCTV5 on March 12, 2026.⁵ On this evidence Pizza Kraft is a venue-operated house brand of Strang Hall, not an independent tenant business.

Description

Pizza Kraft is one of six kitchens operating inside Strang Hall in downtown Overland Park’s Edison District.² Its own page describes it under the tagline “Salads, subs & pies,” with concept copy that “pays homage to the legend of traveling butchers from the foothills of Norcia, in central Italy,” promising “seasonally cured meats and 72-hour cold fermented dough cooked to perfection.”¹ The kitchen’s chef is Doug McNay, described on the page as having “been working in a variety of kitchens for more than 25 years” and considering himself “lucky to hone his skills making his favorite dish, pizza.”¹

The concept is the current name of what was, from Strang Hall’s December 2019 opening, the kitchen Norcini.⁶ Norcini opened with chef Chad Tillman.⁷ By January 2026 the Norcini page carried Doug McNay’s biography and the Norcia copy; by March 2026 the kitchen had been renamed Pizza Kraft, with McNay and general manager Ryan Kramer presenting the new concept on KCTV5.⁶⁵ The rename followed Culinary Virtue’s September 2025 acquisition of the hall, which the buyer said would bring “a mix of fresh concepts.”⁸

Independent tenant or venue house brand?

Assessment: venue-operated house brand of Strang Hall. The evidence that settles it:

• The venue renamed its own kitchen. https://www.stranghall.com/norcini returns HTTP 301 to /pizza-kraft/ — the hall re-pointed its existing kitchen page rather than a tenant leaving and another arriving.³
• Continuity of chef and copy across the rename. The archived Norcini page (captured 2026-01-30) carries the identical “traveling butchers of Norcia” concept text and the identical Chef Doug McNay biography that the Pizza Kraft page carries today.⁶¹
• The review listing carried over. The Yelp entry now titled “Pizza Kraft” sits at the URL yelp.com/biz/norcini-overland-park-3 — the same listing, retitled.⁴
• Presented by hall staff. The KCTV5 segment introducing Pizza Kraft features chef Doug McNay alongside Strang Hall’s general manager, Ryan Kramer — a venue role, not a tenant one.⁵
• No independent business infrastructure. No separate domain, no separate phone (the page lists the hall’s (913) 701-7041), and all ordering links resolve to Strang Hall’s single Toast merchant account rather than a Pizza Kraft storefront.¹⁹¹⁰

No Kansas Secretary of State entity search was completed — the state’s business-entity portal is interactive and was not retrievable with the tools available here. “ A filing search could confirm the absence of a separate Pizza Kraft entity, but the redirect, the copy continuity, and the retitled Yelp listing are already dispositive of the venue-brand question.

Operating status

Active. Pizza Kraft is listed as a current kitchen on Strang Hall’s own site and on every sibling kitchen page as of 2026-08-13.¹²

Corroborating first-party concept copy: the kitchen’s own page describes pizza on 72-hour minimum cold-fermented dough with seasonally cured meats, plus salads and subs — consistent with the menu above.¹

Historical, superseded — do not treat as current. Under the predecessor Norcini name, 2021 press described white and red sauce pizzas, craft sandwiches on fresh baguettes, and a Crab Rangoon Pizza and Breakfast Club Pizza on the brunch menu.¹² None of those items appear on the 2026-08-14 first-party menu.
