Tora Zushi (“Inspired Itamae”) is the sushi and Japanese kitchen inside Strang Hall, the food hall at 7313 W 80th St in downtown Overland Park, Kansas.12 It launched on April 20, 2021 as the second concept of chef Brett DeHart, who already ran the hall’s taco kitchen Fénix; “Tora” — Japanese for tiger — was the nickname his sushi master gave him at Nara.3 DeHart has since left Strang Hall to open his own restaurant, The Go To, in Louisburg, Kansas, referenced in the past tense by The Pitch in June 2025.4 Tora Zushi continues under the Strang Hall banner with no separately named chef or operator published, and on the evidence available it now reads as a venue-operated house brand of Strang Hall rather than an independent tenant business.

Description

Tora Zushi is one of six kitchens operating inside Strang Hall in downtown Overland Park’s Edison District.2 Its own page describes it under the tagline “Inspired Itamae”: “Tora, meaning ‘Tiger’ in Japanese, embodies the spirit of bold and traditional Japanese cuisine. From classic dishes to creative, daring flavors, this spot is sure to become your new favorite sushi destination.”1

The kitchen opened on April 20, 2021, following a soft opening the previous week, as chef Brett DeHart’s second concept inside the hall — he already ran the taco kitchen Fénix a few steps away.3 DeHart had apprenticed at Jun’s in Prairie Village in the early 2000s and later became executive chef at Nara, where his sushi master gave him the nickname “Tora.”3 He described the menu as a deliberate split between traditional items and fusion invention, and at launch said “I’m honored that Strang Hall trusts my skill and talent.”3

DeHart is no longer at Strang Hall. The Pitch, writing in June 2025 about his own restaurant The Go To in Louisburg, Kansas, referred to Fénix and Tora Zushi in the past tense.4 Both brands remained in the hall after his departure, and Strang Hall changed hands in September 2025, when Kansas City restaurant group Culinary Virtue acquired it.5 The current Tora Zushi page carries no chef biography.1

Independent tenant or venue house brand?

Assessment: venue-operated house brand of Strang Hall — inference, not a sourced assertion. No source located states in terms who owns the Tora Zushi brand today. The following first-party evidence supports the house-brand reading:

  • No independent web presence. Tora Zushi’s only website is a page on the hall’s own domain, stranghall.com/tora-zushi/. No separate domain was found.1
  • Shared phone and email. The page lists the hall’s shared number, (913) 701-7041, and the hall’s contact address; no Tora Zushi-specific line exists.16
  • Shared ordering account. Every “Order Now” / “View Menu” link on the Tora Zushi page resolves to Strang Hall’s single Toast account (toasttab.com/strang-hall/v3), with Tora Zushi appearing as a menu group inside it — not a separate merchant storefront.7
  • The hall rebrands its own kitchens. Strang Hall renamed its pizza stall from Norcini to Pizza Kraft in early 2026 while keeping the same chef and the same page (the old URL 301-redirects to the new one) — venue-level control of the brands rather than tenant turnover.89
  • The founding chef left and the brand stayed. DeHart departed to open The Go To; Tora Zushi continued in his absence and now publishes no named chef.41

Countervailing evidence: Tora Zushi was created as a chef-entrepreneur concept in 2021, DeHart’s launch quote (“I’m honored that Strang Hall trusts my skill and talent”) frames the hall as landlord rather than employer, the brand retains its own Facebook page, and Strang Hall’s original 2019 model was explicitly a culinary incubator leasing stalls to independent chefs.3105 It is therefore possible Tora Zushi is still a distinct business under a chef not publicly named. This is not resolved. No Kansas Secretary of State filing search was completed — the state’s business-entity search is an interactive portal not retrievable by the tools available here. “
