the Quillec family’s New American / New England-style restaurant at The Inn at Meadowbrook, opened in 2020 to reflect Joanne Quillec’s Philadelphia/East Coast roots; the American counterpart to the family’s French concepts (Café Provence, French Market). Tier 1 as part of a 20+ year owner-operated Prairie Village family enterprise.
Description
Verbena is a New American restaurant located in The Inn at Meadowbrook, in the heart of Prairie Village’s 80-acre Meadowbrook Park.1 It blends East Coast and Midwest influences, built around East Coast / New England fare to reflect co-owner Joanne Quillec’s Philadelphia roots, and serves seasonally inspired cuisine with an extensive wine list and craft cocktails.12
The menu features New England-style seafood — Maine lobster and crab rolls, New England clam chowder, crab dip, and fish and chips — alongside heartier dishes such as New York strip steak and duck-confit risotto; the restaurant’s award-winning oysters are flown in daily from Boston.32 A sister grab-and-go concept, The Market at Meadowbrook, operates next door.2
As of 2026 Verbena remains open, with hours of roughly 11:00 am–9:00/10:00 pm Monday–Saturday (closed Sunday) and a Yelp listing updated June 2026.3
Ownership and history
Verbena is owned by the Quillec family — Patrick and Joanne Quillec — the same family behind the French concepts Café Provence and French Market in Prairie Village.2 It opened in May 2020, alongside The Inn at Meadowbrook, during the COVID-19 pandemic.2
The restaurant’s origin is tied to the family’s other ventures: more than 18 months before opening, the Quillecs had been asked to relocate Café Provence to Meadowbrook. Rather than move their French flagship, they chose to create a new restaurant — Verbena — to showcase the family’s American side, anchored by Joanne Quillec’s Philadelphia/East Coast heritage.2 Where Café Provence and French Market represent the family’s French tradition, Verbena represents its American one, completing the Quillecs’ three-restaurant Prairie Village enterprise.2
