Independence MO original 2000; founder Dan Gerson (died Sept 2023); sold 2010 to Chad + David Offerdahl father-son ownership; now 29 locations across KS / MO / OK / AR; franchising since 2019. Tier 2 with franchise + multi-state disclosure pattern.

Description

The Big Biscuit opened in Independence, Missouri in 2000 as a single restaurant concept founded by Dan Gerson. With no vision for expansion beyond the original two locations, Gerson sold the business in 2010. From 2010 forward, father-son duo Chad and David Offerdahl + loyal operators grew the concept; David remains in important advisory role as co-CEO; Chad serves as CEO.12

The operation has grown to 29 locations across Kansas, Missouri, Oklahoma, and Arkansas. Franchising began in 2019; the first franchise location opened in 2020. The majority of locations remain corporate-owned. Dan Gerson died unexpectedly in September 2023.1

Why Tier 2 classification

The Big Biscuit illustrates a multi-state-franchise-active Tier 2 case. Even though the founder + ownership transition is well-documented and the Offerdahl-family ownership is real:

  • 4-state operation crosses the threshold for “chain”
  • Active franchising since 2019 is structurally chain behavior
  • 29 locations with multiple operators per location is operational scale beyond the Tier 1 family-restaurant model

The classification is Tier 2 — KC-rooted with KC HQ but operating at multi-state-chain scale. Per Editorial-Firewall-Registry-Stress-Tests: the Registry handles this with explicit disclosure (multi-state + franchise + ownership history all documented).

KC-metro locations

Multi-location operator pattern (per 2026-05-17_strategist-session-decisions-rounds-1-10 §D6.3): per Geographic-Scope, only the KC-metro locations enter the Map dataset — Oklahoma, Arkansas, Springfield/Columbia/Joplin/St. Joseph MO, and Topeka/Wichita/Lawrence KS are excluded. Of 31 company-wide locations, 15 are in the KC metro (8 MO + 7 KS). Each metro location is its own Map pin linking back to this operator-level page. The concept is classic Midwestern breakfast and lunch in oversized portions — the namesake “big biscuit,” plate-sized pancakes, and generous platters. A 2026 menu refresh introduced a Build-Your-Own (BYO) Breakfast Sandwich.5

Biscuits & gravy (the signature)

  • Full Biscuits & Gravy — two big biscuits and sausage gravy, served with potatoes.6
  • Half Biscuits & Gravy — one big biscuit and gravy with potatoes.6
  • Quarter Biscuits & Gravy — half a big biscuit and gravy with potatoes.6

Big breakfast platters

  • Big Breakfast — two eggs, bacon, sausage, ham, potatoes, and a choice of a big biscuit & gravy or two plate-sized pancakes.56
  • Jim’s Platter — two eggs, a big biscuit with gravy, and potatoes.6
  • Mayberry — sausage and cheddar omelet with a big biscuit, gravy, and potatoes.6

Omelets (3-egg, served with potatoes/hash browns/grits + biscuit or toast)

  • Kansas City Omelet — the gigantic house omelet: smoked ham, bacon, sausage, cheddar (larger 4-egg version adds mushrooms, tomatoes, green peppers, onions, hash browns, topped with a buttermilk biscuit & gravy).56
  • The Titanic — four eggs loaded with fillings, topped with a big biscuit and gravy.6
  • Ranchero (steak, jalapeños, tomatoes, onions, jack/cheddar), Popeye (spinach, mushrooms, jack), Bacon & Cheddar, Ham & Cheddar.6

Benedicts

  • Traditional (ham, poached eggs, hollandaise on English muffin), Country (scrambled eggs + sausage/bacon on a big biscuit with gravy), Florentine (spinach, tomato, hollandaise), The Cowboy (chicken-fried steak on a big biscuit with hash browns and eggs).6

Pancakes & French toast

  • Buttermilk Pancakes — two plate-sized cakes; Pancake Combo adds eggs and bacon/sausage.6
  • Cinnamon Roll Pancakes (brown sugar, cinnamon, icing); French Toast (thick-cut), French Toast Combo, Blueberry Bliss (blueberry compote).6

Breakfast sandwiches

  • Build-Your-Own (BYO) Breakfast Sandwich (2026 menu) — two hand-cracked scrambled eggs and melted cheddar on a buttermilk biscuit or griddled brioche bun, with choice of bacon, smoked ham steak, or hand-pattied sausage, and mayo or chipotle mayo.5

Lunch — chicken, sandwiches & baskets

  • Chicken: Classic Crispy Chicken Sandwich, Kick’n Chicken (buffalo), Honey Money (honey-mustard), Chicken Strip Basket, Yard Bird (breaded breast + cheddar on a biscuit with gravy).6
  • Sandwiches: Big BLT (bacon, cheddar, lettuce, tomato), Boss Tom (turkey, bacon, tomato, jack), Breaded Pork Tenderloin, The Texan (chicken-fried steak on a big biscuit with gravy).6

Representative prices (Overland Park aggregator listing): Full Biscuits & Gravy ~$7.99 · Big Breakfast ~$11.29 · Kansas City Omelet ~$9.99 · Buttermilk Pancakes ~$5.99 · Big BLT ~$8.99.6 On delivery platforms the same items run notably higher (e.g. DoorDash Lenexa: Full Biscuits & Gravy ~$11.99, Big Breakfast w/ Biscuits & Gravy ~$20.39, Kansas City Omelet ~$19.19) due to platform markup.7

Price-tier honesty: Medium confidence. Item names and descriptions are well-corroborated across the official site and multiple aggregators; prices are approximate and location-dependent — the official menu page publishes item images without prices, aggregator figures may lag, and delivery-platform prices carry markup. Treated as a value-priced / Medium breakfast-and-lunch tier; dollar figures should be re-confirmed against an in-restaurant menu before publication.
